At Smokinlicious®, we are always researching and developing new products to bring the easiest and most delicious smoked foods to your table. We currently are working on an exciting product that we have initially called “The Swimming Fish Plank”. This specially designed cooking plank will allow the cook to take an entire fish (rainbow trout, sea bass, catfish, small salmon, etc.), stuff it with your choice of flavorings and fillers, and then position it so it can cook while in a traditional “swimming” position. Imagine how wonderful freshly caught fish can taste on an open-pit fire or on that smoker you lugged down to the camp site. Or, you’ll even want to try it on the gas/propane grill. Watch our website for more details on this exciting new product!

As we travel the barbecue circuit we are frequently asked why our cooking planks look so different from anything else on the market. Well, first, we only use hardwoods that not only tolerate heat from a firebox but are versatile enough to go into a water bath in the oven. Second, we don’t plane or smooth sand are cooking planks causing the wood to seal. If you seal the wood, then how do you expect flavor to seep out of the wood and into your food? Our cooking planks contain “Flavor Pockets” – small, holes that allow the natural flavor of the wood as well as any flavorings you add (i.e. wine, liquor, citrus slices, etc.) to penetrate the food placed on the plank. Although we’re all aware of a wood that has been commonly used to plank foods, you need to ask yourself – isn’t this the same wood that contractors side houses with? Remember, the flavor is in the pocket and the pocket can only be found in the Smokinlicious® Flavor Pocket Cooking Plank!

Does Sweet Sugar Maple Sour Up

We are fortunate to provide you with one of the most popular wood species for smoking foods: Sweet Sugar Maple hardwood. This extremely versatile wood can be used to smoke everything from eggs to brisket. It is highly popular due to its sweet flavor which seems to infuse so easily in foods like chicken and pork. But Sugar Maple is not the only variety of Maple hardwood available in the USA. Silver Maple, Red Maple, and Box Elder are other varieties that can be found. However, by far, Sugar Maple is the best species for smoking foods as it has approximately 2% higher sugar concentration than any other variety. One caution regarding Sugar Maple is the color change that occurs with the wood. Depending on when the wood is harvested, it generally has a light tan appearance but can be as light as a blonde coloring. This wood will naturally change color to a darker brown or even light gray. Why such a drastic change in color even when you keep the wood out of the light? Well, lighting has no effect on this wood. What changes the coloring is the molecular make-up of Sugar Maple. This tree is designed to produce maple syrup! Since it is one of the most popular trees to tap for the maple syrup producing sap, it also undergoes some changes both pre-sap production and post-sap production. So when you get the wonderfully sweet Sugar Maple hardwood and see that it has gone dark on you, whatever you do, don’t throw it away! Continue to enjoy its wonderful flavoring. Just think of it as wood that has gone on vacation and come back with a deep, dark tan!
