OVER WOOD MAKE YOU SICK?<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5026\" class=\"wpsdc-drop-cap\">L<\/span>et me begin by emphasizing that we have <strong><em>a lot<\/em><\/strong> more research to do on woods used for cooking!\u00a0 <a href=\"http:\/\/www.foodsafetynews.com\/2011\/01\/harmful-hearths-open-fire-cooking-threatens-lives\/#.WLw3MzjwC3d\">There has been a great deal of attention to developing countries who, out of necessity<\/a>, <a href=\"http:\/\/www.thejournal.ie\/health-risks-fossil-fuels-pollution-1650076-Sep2014\/\">have to rely on wood fires for cooking to survive<\/a>.<\/p>\n<p>I\u2019m going to first relate the information on why the risks in North America are not the same as developing countries and then I will highlight the top six (6) potential reactions we face when using specific woods for cooking.\u00a0 This will be generalized reactions to wood compounds and not the direct result of a specific cooking technique.<\/p>\n<p>Developing countries generally use very primitive equipment for cooking the daily meals needed to sustain families.\u00a0 The simplest method is with three large stones to contain the fire with a pot or other metal container placed on top for the cooking.\u00a0 The fires are fueled by solid materials like coal, wood, dung, and crop waste.\u00a0 All these materials <a href=\"http:\/\/www.foodsafetynews.com\/2011\/01\/harmful-hearths-open-fire-cooking-threatens-lives\/#.WLw3MzjwC3d\">release harmful particles<\/a> into the air as they burn.\u00a0 Here\u2019s the issue: they employ this cooking set up INDOORS, where they live which generally is in homes constructed from thatch, mud, and\/or animal skins.\u00a0 Chimneys may not be present or if present, have no flue to draw the contaminated air out.<\/p>\n<p><!--more--><\/p>\n<h2><strong><em>What results from the exposure to smoke from cooking daily in these situations?<\/em><\/strong><\/h2>\n<ul>\n<li>Respiratory Infections<\/li>\n<li>Asthma<\/li>\n<li>Chronic Obstructive Pulmonary Disease<\/li>\n<li>Ocular Disorders<\/li>\n<li>Lung Cancer and Upper Airway Cancers<\/li>\n<li>Death (from long-standing exposure)<\/li>\n<\/ul>\n<p><span class=\"wpsdc-drop-cap\">I<\/span>n North America, we view wood-fired cooking as entertainment as we are blessed with having other options for our primary cooking needs, specifically, gas, electric and convection cooking equipment.\u00a0 Our equipment is built from high-end materials with proper ventilation key to installing and using this equipment.\u00a0 All our cooking can be done safely with minimal exposure to the health risks listed above.<\/p>\n<p>Most of us engage in wood-fired cooking outside, where the particulate matter of smoke cannot accumulate in one area lowering our risks for compromised health.\u00a0 Restaurants who include wood-fired menu items do so by having specialized ventilation that must pass a rigorous inspection.\u00a0 All this ensures that we don\u2019t suffer the same consequences as these developing countries.<\/p>\n<p>The question is: <strong><em>are there any other variables that put us at risk when we cook with wood even outdoors?<\/em><\/strong><\/p>\n<p>I\u2019m going to pick some of the most popular woods to cook within North America and isolate some of the potential concerns with these woods.\u00a0 I will list these by two categories: fruitwood and hardwood.<\/p>\n<h2><strong>Fruit Woods- Cooking Over Wood<br \/>\n<\/strong><\/h2>\n<p><span class=\"wpsdc-drop-cap\">I<\/span>n this group, I\u2019ll include <strong>Apple, Cherry, Grape, Peach, Pear<\/strong> as these tend to be the favorite fruit woods to use for wood-fired cooking.\u00a0 Let\u2019s address the gorilla in the room first\u2013 <strong>pesticides<\/strong>.<\/p>\n<p>Like the fruit these trees produce, the wood absorbs the pesticides that are applied to the trees.\u00a0 Eat a non-organic apple (keep in mind organic produce also is exposed to pesticides but usually these are natural derivatives and not synthetic), wash it, and you will still absorb any pesticide that has been absorbed into the actual fruit meat.\u00a0 Same is true for the tree.\u00a0 Pesticide applications embed into the soil base of the tree, which then enters the root system, and is on the way to the other parts of the tree.\u00a0 Now let\u2019s be clear, pesticides can also become air born as they turn into a vapor and travel by air.\u00a0 The bark of any tree is a great absorber of these air particles.\u00a0 Once pesticides enter the human body, they are stored in the colon.<\/p>\n<p>For the <em>Prunus Armeniaca <\/em>family which includes ornamental cherry, peach, plum, and apricot trees and shrubs, it is the stems, leaves, and seeds that pose the greatest risk if these are consumed by animals, even the dog, and cat. \u00a0<strong>Cyanide<\/strong> is present and can be lethal to animals so if you bring in wood with bark and\/or leaves intact, be sure these are away from all animals.<\/p>\n<p><!--more--><\/p>\n<h2><strong>Hardwoods- Cooking Over Wood<br \/>\n<\/strong><\/h2>\n<p><span class=\"wpsdc-drop-cap\">P<\/span>opular hardwoods to use for cooking include <strong>Beech(nut), Cedar, Alder, Pecan, Mesquite, Hickory, Maple, and Oak<\/strong>.\u00a0 For all these woods as well as the fruit woods, dust irritation in the form of rhinitis and the general respiratory reaction is a given.\u00a0 Wood dust is an irritant.\u00a0 How people react to the dust is dependent on each person\u2019s immune system.\u00a0 You should make every attempt to purchase wood for cooking that is clean of dust, particularly for wood chips.\u00a0 Often sellers of wood chips don\u2019t screen the product sold and you can often end up with a bag or box full of wood dust.\u00a0 This will certainly aggravate most respiratory systems and potentially could exacerbate already compromised systems.<\/p>\n<p>Many hardwoods trigger pollen sensitivities.\u00a0 <a href=\"http:\/\/burningissues.org\/woodsmokefoodallergy.html\">New research in the areas of allergens and immunology are beginning to show that many allergens survive combustion or wood burning when used in cooking and trigger the same allergic reaction or sensitivities as a pollen sensitivity<\/a>.<\/p>\n<p>Of the hardwood listed above, these are the noted potential reactions:<\/p>\n<p><strong>Alder: <\/strong>dermatitis, rhinitis, bronchial effects, eye irritation<\/p>\n<p><strong>Apple: <\/strong>seeds contain cyanogenic (cyanide), pesticide risk\/reaction<\/p>\n<p><strong>Beech: <\/strong>irritant likely from bark lichens, dust, leaves<\/p>\n<p><strong>Cedar: <\/strong>allergic contact dermatitis<\/p>\n<p><strong>Cherry: <\/strong>cyanogenic<\/p>\n<p><strong>Grape: <\/strong>pesticide risk\/reaction<\/p>\n<p><strong>Hickory:<\/strong> irritant from dust<\/p>\n<p><strong>Peach: <\/strong>pesticide risk\/reaction<\/p>\n<p><strong>Pear: <\/strong>pesticide risk\/reaction<\/p>\n<p><strong>Pecan: <\/strong>irritant from dust; high level of ethanol extract in the bark<\/p>\n<p><strong>Maple: <\/strong>irritant, asthma, sensitizer<\/p>\n<p><strong>Mesquite:<\/strong> dermatitis, coughing, respiratory<\/p>\n<p><strong>Oak:<\/strong> irritant, sensitizer, asthma, eye irritation, dermatitis<\/p>\n<p>Today, I\u2019ve highlighted only those hardwoods that have gained popularity as a cooking or grilling wood.\u00a0 In future articles, we will explore the hazards of using woods that are less common and more toxic.\u00a0 Don\u2019t assume just because you\u2019re cooking outdoors, the risks are few.\u00a0 Be informed on the wood choice before you make a lethal mistake.<\/p>\n<p>Start a conversation with
