Lose the moisture and the wood becomes only a fire stick, producing heat.\u00a0 This results in the opposite of what you want when trying to add flavor from the wood.<\/p>\n<h2>Proper Storage is Key<\/h2>\n<p><span class=\"wpsdc-drop-cap\">W<\/span>e know that <a href=\"https:\/\/www.smokinlicious.com\/blog\/storage-of-unused-wood\/\">storage of wood<\/a> in a cool, dry location will preserve the <a href=\"http:\/\/www.smokinlicious.com\/index.php?Moisture\"><strong><em>moisture<\/em><\/strong><\/a> level in the wood. Why?\u00a0 Wood loves to adjust to temperature and humidity to find balance.\u00a0 But how cool or warm does that location have to be?\u00a0 Is there an ideal temperature?\u00a0 Let&#8217;s find out by doing a simple experiment.<\/p>\n<h3>Time to Experiment!<\/h3>\n<p><span class=\"wpsdc-drop-cap\">H<\/span>ow do we get started with our experiment.\u00a0 Wet and dry are all dependent on moisture.\u00a0 Fluctuate temperature and you will change moisture.<\/p>\n<p>Using identical pieces of hardwood &#8211; same species, moisture level and size &#8211; one piece was placed in the refrigerator with a temperature between 40-42\u00b0F.\u00a0 The other piece was placed in the freezer with a temperature of 30\u00b0F.\u00a0 Using a timetable of three weeks, we took moisture readings each week.\u00a0 Let&#8217;s see how the hardwood did:<\/p>\n<p><strong>\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 Freezer\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Refrigerator<\/strong><\/p>\n<p><strong>Starting Level<\/strong>\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 27.1%\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 30.8%\u00a0\u00a0 <a href=\"http:\/\/www.smokinlicious.com\/index.php?Moist%20Table\"><strong>Moisture<\/strong><\/a><\/p>\n<p><strong>Week One\u00a0\u00a0<\/strong> \u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 \u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 18.8%\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a030.3%<\/p>\n<p><strong>\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 Two\u00a0<\/strong> \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0 \u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 18.6%\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 30.0%<\/p>\n<p><strong>\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 Three<\/strong> \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 \u00a0\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 16.9%\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 29.8%<\/p>\n<p>&nbsp;<\/p>\n<p><span class=\"wpsdc-drop-cap\">H<\/span>oly icicle!\u00a0 There are some major results here.\u00a0 First, log in the freezer lost nearly 50 percent of its moisture in just 3 weeks!\u00a0 Second, refrigerating smoking wood appears to stabilize it.\u00a0 If you want to make the wood happy, refrigerate it.<\/p>\n<h2>Lessons Learned?<\/h2>\n<ol>\n<li>Wood likes cooler temperatures in the range of 45\u00b0F.<\/li>\n<li>Wood doesn&#8217;t mind a dark storage area.<\/li>\n<li>Freezer temperatures cause the free water in the wood to evaporate quickly.<\/li>\n<li>Wood likes as much space as it can get.<\/li>\n<li>Don&#8217;t store in plastic unless you want mold!<\/li>\n<\/ol>\n<p>There you have it!\u00a0 If your cooking and smoking with food, regardless if you&#8217;re using <a href=\"https:\/\/www.smokinlicious.com\/blog\/crushed-and-diced-a-reference-for-wood-as-well\/\">wood chips<\/a>, <a href=\"https:\/\/www.smokinlicious.com\/blog\/category\/smokinlicious-products\/hardwood-chunks\/\">wood chunks<\/a>, <a href=\"https:\/\/www.smokinlicious.com\/blog\/smoker-logs\/\">logs<\/a> or <a href=\"https:\/\/www.smokinlicious.com\/blog\/smokin-dust-a-spice-for-your-equipment\/\">smoking dust<\/a>, the popular question of <a href=\"https:\/\/www.smokinlicious.com\/blog\/storage-of-unused-wood\/\">how to store smoking woods<\/a> rests with a cool location, no direct sunlight and avoidance of plastic storage.<\/p>\n<p>Just one more reason SmokinLicious\u00ae <a href=\"http:\/\/www.smokinlicious.com\/index.php?Products\"><strong><em>products<\/em><\/strong><\/a> are the best!<\/p>\n<h2><strong>CURRENT DAY UPDATE<\/strong><\/h2>\n<p><span class=\"wpsdc-drop-cap\">I<\/span>t seems that moisture and wood storage remain a hot topic.\u00a0 As more people invest in vacuum sealer devices for their food products, they question whether these are a good alternative for wood storage.<\/p>\n<p>The short answer is, no.\u00a0 Let&#8217;s take a look at the reasons why.<\/p>\n<h2>Vacuum Sealing Wood is <em>Not<\/em> a Good Idea!<\/h2>\n<p><span class=\"wpsdc-drop-cap\">T<\/span>he purpose of vacuum sealing foods is to remove all the air or oxygen.\u00a0 Oxygen is what mold and bacteria thrive on. When using feezer bags, foods don&#8217;t show freezer burn which extend their life in the freezer.\u00a0 For refrigerated foods that are vacuum sealed, you&#8217;ll find an extended life as well.\u00a0 The question is, will the extended life transfer to wood stored in a vacuum sealed bag?<\/p>\n<p>To answer this question, you need to understand what oxygen does.\u00a0 First, wood needs air.\u00a0 By removing all the air in a vacuum bag, stress results on wood fibers.\u00a0 Deprive wood of air and you have a greater risk for developing specific molds that thrive in oxygen low environments.\u00a0 Second, the plastic bag increases the risk for mold on the wood.\u00a0 Wood likes cooler temperatures but it does NOT like to be wrapped in plastic.<\/p>\n<p>In the end, it is best to find a cool, dark location that has airflow for your wood.\u00a0 Keep it away from plastic and from porous materials like a concrete floor.
