{"id":583,"date":"2017-04-19T09:28:23","date_gmt":"2017-04-19T13:28:23","guid":{"rendered":"http:\/\/www.smokinlicious.com\/blog\/?p=583"},"modified":"2021-08-27T10:49:01","modified_gmt":"2021-08-27T14:49:01","slug":"when-a-flop-could-have-been-a-success","status":"publish","type":"post","link":"https:\/\/www.smokinlicious.com\/blog\/when-a-flop-could-have-been-a-success\/","title":{"rendered":"WOOD-FIRED GRILL RESTAURANT MENU- WHEN A FLOP COULD HAVE BEEN A SUCCESS!"},"content":{"rendered":"<div id=\"attachment_1011\" style=\"width: 510px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-1011\" class=\"wp-image-1011 size-full\" style=\"border: 4px solid #b713b7;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/flop-infographics-for-the-flop.jpg\" alt=\"Picking the proper cooking wood can only lead to success versus a flop- for the wood fired grill\" width=\"500\" height=\"275\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/flop-infographics-for-the-flop.jpg 500w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/flop-infographics-for-the-flop-300x165.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><p id=\"caption-attachment-1011\" class=\"wp-caption-text\">Menu board found in most restaurants- highlighting wood-fired grill<\/p><\/div>\n<h2 style=\"text-align: center;\">WHEN A FLOP COULD HAVE BEEN A SUCCESS WITH THE WOOD-FIRED GRILL!<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5026\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/web-audio-button.jpeg\" alt=\"Listen to the audio of this blog\" width=\"100\" height=\"100\" \/><\/p>\n<audio class=\"wp-audio-shortcode\" id=\"audio-583-1\" preload=\"none\" style=\"width: 100%;\" controls=\"controls\"><source type=\"audio\/mpeg\" src=\"http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/BLOG-AUDIO.mp3?_=1\" \/><a href=\"http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/BLOG-AUDIO.mp3\">http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/BLOG-AUDIO.mp3<\/a><\/audio>\n<p>There is no question that being in the franchise restaurant business is a challenge especially given that there is a national menu dictated by the brand you partnered with.\u00a0 I am <em>amazed<\/em> at the risks brands will take when it comes to making a major capital investment in <a href=\"https:\/\/smallbusiness.chron.com&gt;advertising&amp;marketing&gt;marketing\">marketing strategies<\/a>, equipment upgrades, and personnel training for single concepts.\u00a0 <em>Case in point<\/em>: the obsession with wood-fired grilling to get customers in or coming back!<\/p>\n<p><!--more--><\/p>\n<p>Here are <em>just a few<\/em> brands that took the leap of faith into the wood-fired grill market:<\/p>\n<ol>\n<li style=\"text-align: center;\"><strong><em>Carrabba\u2019s Italian Grill<\/em><\/strong><\/li>\n<li style=\"text-align: center;\"><em><strong>Applebee\u2019s Grill &amp; Bar<\/strong><\/em><\/li>\n<li style=\"text-align: center;\"><em><strong> Outback Steakhouse<\/strong><\/em><\/li>\n<li style=\"text-align: center;\"><em><strong> Red Lobster<\/strong><\/em><\/li>\n<li style=\"text-align: center;\"><em><strong> Logan\u2019s Roadhouse<\/strong><\/em><\/li>\n<li style=\"text-align: center;\"><em><strong> Bonefish Grill<br \/>\n<\/strong><\/em><\/li>\n<\/ol>\n<p>Certainly, not all these efforts have resulted in 100% failure as often the addition of a wood-fired oven or grill was added for other menus items that had an established following or existed from the conception of the franchise.\u00a0<em> For instance<\/em>, <strong><em>Carrabba\u2019s Italian Grill<\/em><\/strong> offers wood-fired pizza in their brick oven so it is not a giant leap for them to do wood-fired chicken.\u00a0 The same can be said for Bonefish Grill whose focus is fresh fish<strong><em>.\u00a0 Logan\u2019s Roadhouse<\/em><\/strong> and <strong><em>Outback Steakhouse<\/em><\/strong> bring diners in for mostly steak and that is a protein accustomed to being cooked by fire.<strong><em>\u00a0\u00a0<\/em><\/strong><\/p>\n<p><em> What happens when a decision is made by a brand to go into this unchartered area?<\/em><\/p>\n<p><em>\u00a0<\/em>There are two franchises that standout on this topic: <strong><em>Red Lobster<\/em><\/strong> and <strong><em>Applebee\u2019s Grill &amp; Bar<\/em><\/strong><em>.\u00a0 <\/em>More than 6 years ago, <strong><em>Red Lobster<\/em><\/strong> began a major marketing campaign on their newly launched \u201cwood-fired assisted grills\u201d.\u00a0 The brand stated a commitment to using oak wood for their wood-fired menu items. At some locations, though not all, you would find a log holder with firewood logs outside or just inside the front door.\u00a0 In 2016, <strong><em>Applebee\u2019s Grill &amp; Bar<\/em><\/strong> attempted a major menu change with the introduction of wood-fired steaks, pork, chicken, and salmon which required the purchase and installation of wood-fired grills to its nearly 2000 locations.\u00a0 Why don\u2019t you see these two brands focused on wood-fired menus any longer?\u00a0 The short answer is, <strong><em>they didn\u2019t study the market on wood-fired cooking with the help of a wood expert!<\/em><\/strong><\/p>\n<p>What should have been done to make this capital venture, this leap-of-faith, successful? By far, the most pivotal mistake made was not understanding the role the wood plays in food <a href=\"https:\/\/www.smokinlicious.com\/basics-of-smoking.html\">flavor<\/a>.\u00a0 Both <strong><em>Red Lobster<\/em><\/strong> and <strong><em>Applebee\u2019s Grill &amp; Bar<\/em><\/strong> defaulted to using oak, an extremely strong wood to use in cooking.\u00a0 Also, they elected to use firewood meaning that the variety of oak, if not sourced by one supplier, would vary by region or state, if indeed they received oak exclusively.\u00a0 Most firewood suppliers <strong>do not<\/strong> sell one type of wood.\u00a0 In fact, firewood could be a mix of softwood and hardwood which should be of great concern when you are targeting cooking.<\/p>\n<p>Understand, that most franchise brands do not come up with a concept and immediately put it in place.\u00a0 There is a testing period, usually two, whereby they take a small sampling of their locations and put the new menu items in place. \u00a0Then they collect feedback and data.\u00a0 The catastrophic failure that occurred for <strong><em>Applebee\u2019s Grill &amp; Bar <\/em><\/strong>is that they did not stay true to the procedures set in place during the testing period when they rolled this out to nearly 2000 locations.\u00a0 The result: they will turn in the<em> worse<\/em> 2016 sales numbers for a franchise restaurant.<\/p>\n<h2 style=\"text-align: center;\"><strong><em>What is the lesson to take away?<\/em><\/strong><\/h2>\n<p>If you are considering adding wood-fired menu items to your business,<strong><em> do your research<\/em>!<\/strong>\u00a0 Don\u2019t get enamored with the idea of this style of cooking.\u00a0 <em>Learn from an expert<\/em> what occurs to foods exposed to live fire, what changes result flavor-wise, and what to avoid in wood choices based on the equipment.\u00a0 Most of all, start out by understanding, <em>not all wood is appropriate for cooking and not all suppliers have great <a href=\"https:\/\/www.smokinlicious.com\/about-our-wood.html\">wood<\/a><\/em>.\u00a0 Then<em> take advice<\/em> from the <a href=\"https:\/\/www.nytimes.com\/...\/more-chefs-are-enthusiastic-about-wood-fired-grilling.html\">expert<\/a> rather than risking not only the success of your business but the health and experience of your guests who dine with you.<\/p>\n<div id=\"attachment_5024\" style=\"width: 160px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5024\" class=\"size-full wp-image-5024\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/Dr-Smoke-for-Blog-Web-page-.jpeg\" alt=\"Dr. Smoke- Learn about the wood-fired grill issues with restaurants\" width=\"150\" height=\"150\" \/><p id=\"caption-attachment-5024\" class=\"wp-caption-text\">Dr. Smoke- Learn about the wood-fired grill issues with restaurants<\/p><\/div>\n","protected":false},"excerpt":{"rendered":"<p>So, why don\u2019t you see these two brands focused on wood-fired menus any longer?
