We take great pride in our Forest Stewardship practices to stop oak tree mortality.<\/p><\/div>\n<h2 style=\"text-align: center;\">IS THE FOOD INDUSTRY CULPABLE FOR THE SPREAD OF OAK TREE MORTALITY?<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5026\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/web-audio-button.jpeg\" alt=\"To our blog kiwifruit gets smoky\" width=\"100\" height=\"100\" \/><\/p>\n<h3><\/h3>\n<audio class=\"wp-audio-shortcode\" id=\"audio-580-1\" preload=\"none\" style=\"width: 100%;\" controls=\"controls\"><source type=\"audio\/mpeg\" src=\"http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/BLOG-AUDIO4.mp3?_=1\" \/><a href=\"http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/BLOG-AUDIO4.mp3\">http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/BLOG-AUDIO4.mp3<\/a><\/audio>\n<p>In a previously published article about the food industry; we discussed the negative outcome as it relates to sales dollars when brands elect to go into the wood-fired cooking arena without researching anything about wood for cooking. \u00a0 Let\u2019s take a step further and explore the actual wood and potential risks like <a href=\"https:\/\/www.suddenoakdeath.org\/\">oak tree mortality<\/a> when a brand fails to carry out a menu plan, thus abandoning the wood-fired cooking concept.<\/p>\n<p>I often wonder if the public is aware of all the pest infestations that are currently plaguing our country as a direct result of the movement of wood.\u00a0 Correction, that occurred due to global trade.\u00a0 Yes, it is the use of imported goods on wooden packaging materials in addition to imported plants that have resulted in infestations around our country.\u00a0 Each year, this risk of infestation continues to rise and frankly, I opine that it isn\u2019t all due to importation.<\/p>\n<h3><strong><em>What if the food industry is really the key contributor to this problem?<\/em>\u00a0 <\/strong><\/h3>\n<p>Emerald Ash Borer, Hemlock Woolly Adelgid, White Pine Blister, Gypsy Moth, Beech Bark Disease, Sirex Wood Wasp, Winter Moth, Dutch Elm Disease, Dogwood Anthracnose, Butternut Canker, Sudden Oak Death, Balsam Woolly Adelgid.<\/p>\n<p>These are just some of the infestations that are being tracked in the USA.\u00a0 Let\u2019s take a closer look at one hardwood species that is of great concern: <a href=\"http:\/\/www.smokinlicious.com\/blog\/the-boldness-of-oak\/\">Oak<\/a>.<\/p>\n<p>It is the hardwood of choice when it comes to restaurants likely due to all the hype from the state of Texas when it comes to barbecue.\u00a0 They like their beef (brisket specifically) and they like it cooked over oak.\u00a0 As mentioned in our article <a href=\"http:\/\/www.smokinlicious.com\/blog\/when-a-flop-could-have-been-a-success\/\">\u201c<em>When A Flop Could Have Been A Success,\u201d<\/em><\/a> there were two franchise brands in particular, that banked on only oak for the success of their wood-fired menu items: <strong><em>Red Lobster <\/em><\/strong>and <strong><em>Applebee\u2019s Bar &amp; Grill<\/em><\/strong>.<\/p>\n<h3><strong>Oak Tree Mortality &amp;\u00a0 the Food Industry<br \/>\n<\/strong><\/h3>\n<p><strong><em>Red Lobster<\/em><\/strong> has over 700 locations while <strong><em>Applebee\u2019s Bar &amp; Grill<\/em><\/strong> has nearly 2000 locations.\u00a0 Now process those numbers.\u00a0\u00a0 By sourcing it from whatever suppliers they can locate and then putting it into the food industry distribution network to be delivered with other restaurant goods (including foods items like produce, spices, herbs, etc).\u00a0 Given the enactment of the <strong>FDA\u2019s <em>Food Safety Modernization Act (FSMA)<\/em><\/strong><em>, <\/em>we are starting to address some concerns related to the food industry. Unfortunately, the use of wood, more specifically firewood in restaurant kitchens, has not been identified as a need when it comes to health.\u00a0 <strong><em>Why?<\/em><\/strong><\/p>\n<p>Although<strong><em> Red Lobster<\/em><\/strong> has kept alive some of its wood-fired menu items and <strong><em>Applebee\u2019s Bar &amp; Grill<\/em><\/strong> is still attempting to get some life out of their wood-fired steaks, I state that these plans failed terribly.\u00a0 So, what happened to all the wood that was meant for these restaurants?\u00a0 Did it get thrown into a dumpster at each location to be transported to a landfill?\u00a0 Did employees volunteer to take some as firewood and transport it to their homes ignoring laws in to stop the movement of firewood?\u00a0 Could some supply still be sitting idle in food distribution centers?<\/p>\n<h3><strong>Conclusion<\/strong><\/h3>\n<p>It appears clear that we need to start with the commodity called wood and delineate regulations when it comes to using it for cooking.
