The organs and neck are removed from the cavity and the bird flipped breast side down to expose the backbone.\u00a0 This is where we start our spatchcock process. Get sharp cutting shears ready as we prepare to remove the backbone of our turkey.<\/p>\n<p><strong><em>Tasting Notes: <\/em><\/strong><em>If fresh whole turkey is not available, you may substitute frozen whole turkey.\u00a0 Just be sure it is completely defrosted and pat dried before starting this recipe.<\/em><\/p>\n<h2><strong>Flatten and Rub for a Perfect Spatchcock <a href=\"https:\/\/www.foodiewithfamily.com\/smoked-turkey\/\">Smoked Turkey<\/a><br \/>\n<\/strong><\/h2>\n<p>I won\u2019t lie to you.\u00a0 Removing the backbone of a fresh turkey can be a bit of work, but it is so worth it.\u00a0 Start on one side of the backbone, insert sharp kitchen shears, and start to snip away.\u00a0 You\u2019ll draw the shears along the edge of the backbone, releasing the bone from the meat.\u00a0 Done correctly, the spine will come out in one piece.<\/p>\n<div id=\"attachment_5800\" style=\"width: 100px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5800\" class=\"wp-image-5800 size-thumbnail\" style=\"border: 4px solid #000000;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4579-rotated-e1577048299765-90x150.jpg\" alt=\"We have cut and completely removed the breast bone, which will allow us to press down and flatten the turkey\" width=\"90\" height=\"150\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4579-rotated-e1577048299765-90x150.jpg 90w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4579-rotated-e1577048299765-180x300.jpg 180w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4579-rotated-e1577048299765.jpg 369w\" sizes=\"auto, (max-width: 90px) 100vw, 90px\" \/><p id=\"caption-attachment-5800\" class=\"wp-caption-text\">#spatchock<\/p><\/div>\n<p>With the backbone removed it\u2019s time for the final preparation to the turkey.\u00a0 Flip the turkey back so the breast is facing up.\u00a0 Time to break the breastbone so the turkey will lay flat on the cooking sheet pan.\u00a0 This will take both hands and a lot of force.\u00a0 Position your hands across the breast and push down with all your force until you hear the breast plate break.\u00a0 Now the turkey should be able to lay flat on a sheet pan equipped with a rack for rendering all the juice and allowing even heat distribution around the entire bird.\u00a0 The rack is key to use so heat distributes evenly.\u00a0 The turkey is now ready for a rub with your favorite seasonings, herbs, and spices.<\/p>\n<div id=\"attachment_5795\" style=\"width: 148px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5795\" class=\"wp-image-5795 size-thumbnail\" style=\"border: 3px solid #000000;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4584-rotated-e1577047860642-138x150.jpg\" alt=\"Using your hands to push down and flatten the Turkey on the cooking sheet allows for an even cook! \" width=\"138\" height=\"150\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4584-rotated-e1577047860642-138x150.jpg 138w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4584-rotated-e1577047860642-275x300.jpg 275w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4584-rotated-e1577047860642.jpg 473w\" sizes=\"auto, (max-width: 138px) 100vw, 138px\" \/><p id=\"caption-attachment-5795\" class=\"wp-caption-text\">#spatchocking<\/p><\/div>\n<p>I\u2019m using a simple herb rub that includes fresh sage, oregano, thyme, crushed red pepper, black pepper, marjoram, basil and cumin.\u00a0 I place my ground rub all over the skin of the bird and on the exposed meat side, reaching under the breast skin as well.\u00a0 Now cover with plastic wrap and refrigerate overnight.\u00a0 All this work can be done the night <a href=\"https:\/\/amazingribs.com\/more-technique-and-science\/grill-and-smoker-setup-and-firing\/best-setups-gas-grills-maintenance-and\">prior to grilling<\/a> ensuring all that is left to do, is the simple two-zone cooking.\u00a0 Remember, two-zone cooking \u00a0involves turning only half the burners on and placing a metal smoker box of wood chunks on the hot grate or directly on the heat shield of the hot burners. \u00a0\u00a0Be sure you have the box and hardwood at the ready for this step.<\/p>\n<p>With our prepared spatchcock turkey readied, the sheet pan is added to the grill on the no heat side and the lid is closed.\u00a0 I leave this to cook on its own for about two hours before returning to rotate the pan, checking the smoker box of wood chunks I\u2019m using on the lit side of the grill for the great smoke flavor.\u00a0 Remember, the heat from the burners that are lit will radiate throughout the entire grill, grill-roasting the turkey while the heat stimulates the release of the smoke vapor from the wood.<\/p>\n<div id=\"attachment_5797\" style=\"width: 160px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5797\" class=\"wp-image-5797 size-thumbnail\" style=\"border: 4px solid #000000;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4606-e1577048114247-150x81.jpg\" alt=\"We use our smoker box with Double Filet Wood chunks to add the smoke while doing a two zone cooking method!\" width=\"150\" height=\"81\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4606-e1577048114247-150x81.jpg 150w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4606-e1577048114247-300x161.jpg 300w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_4606-e1577048114247.jpg 616w\" sizes=\"auto, (max-width: 150px) 100vw, 150px\" \/><p id=\"caption-attachment-5797\" class=\"wp-caption-text\">#twozonecooking #woodchunks#smokerbox<\/p><\/div>\n<p><strong><em>Tasting Notes: <\/em><\/strong><em>If you prefer, you can cook the turkey directly on the grill grate.\u00a0 Just be sure to place a water pan under the grate to collect all the juices.<\/em><\/p>\n<h2><strong>Ready in No Time<\/strong><\/h2>\n<p>My nearly 22 lb. fresh turkey takes about 3-3\/4 hours to reach a 165\u00b0F internal temperature.\u00a0 In total, I use about 8 <a href=\"https:\/\/www.smokinlicious.com\/wood-chunks.html\">double filet wood chunks<\/a> for the entire process.\u00a0 The best part, I can do other things while the turkey cooks, then rest it for about 20 minutes before carving.\u00a0 Don\u2019t forget about all the beautiful juice it produces in the pan as well. \u00a0Make gravy, use it as au jus, or save it for producing stock. \u00a0Spatchcock fresh turkey \u2013 the easiest method of no-fuss grilling and smoking of a turkey!<\/p>\n<p>What\u2019s your favorite spatchcock turkey recipe?\u00a0 Leave us a comment to opine and subscribe to get all our postings on tips, techniques and recipes.\u00a0 Bringing innovation to wood fired cooking with recipes, techniques and the science behind the fire, smoke, and flavor.
