I\u2019ll be highlighting Bosc pears in today\u2019s technique.\u00a0 To do this technique you will need:<\/p>\n<ul>\n<li>A stovetop smoking pan set up \u2013 I\u2019m using the <a href=\"http:\/\/www.qvc.com\/Technique-Enameled-Cast-Iron-5-piece-Cookware-Set.product.K19999.html\"><strong>Technique\u00ae<\/strong> Cast Iron Smoker Pan<\/a><\/li>\n<li><a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\"><strong>SmokinLicious<\/strong>\u00ae Minuto\u00ae Wood Chips Size #4<\/a> in your choice of wood species<\/li>\n<li>Fresh pears \u2013 4 will likely fill the smoker pan one time<\/li>\n<li>A Chef\u2019s knife, paring knife, and cutting board<\/li>\n<li>A cooling rack<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<div id=\"attachment_699\" style=\"width: 278px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.smokinlicious.com\/blog\/perfection-of-the-smoked-pear\/half-cut\/\" rel=\"attachment wp-att-699\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-699\" class=\"wp-image-699\" style=\"border: 5px solid #ffc082;\" src=\"http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/HALF-CUT-e1486567162714-300x224.jpg\" alt=\"Pears cut in half\" width=\"268\" height=\"200\" \/><\/a><p id=\"caption-attachment-699\" class=\"wp-caption-text\">Pears cut in half<\/p><\/div>\n<p><strong>PREPARING THE SMOKED PEARS<\/strong><\/p>\n<p><span class=\"wpsdc-drop-cap\">W<\/span>hen I purchased my Bosc pears, I made sure that they were firm to the touch so that I would have some longevity to their use in recipes for a while.\u00a0 Carefully, wash each pear and then pat dry with a paper towel.\u00a0 I then slice each pear in half, removing the stem tip.\u00a0 This will give me a flat surface to smoke and cook my pears since I am using a stovetop grill pan with my process.\u00a0 That will allow me to form some great grill marks on the pears while they cook.\u00a0 The benefit to using halves of pear is I can feature larger pear cuts in a salad or dessert, highlighting the golden smoked color.<\/p>\n<p>Once the pears are halved and the stems removed, I will core out the seeds and hard seed membrane with a small paring knife. Once that step is complete, I start the heat under my stovetop smoking pan.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>\u00a0<\/strong><!--more--><\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<div id=\"attachment_700\" style=\"width: 274px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.smokinlicious.com\/blog\/perfection-of-the-smoked-pear\/remove-core\/\" rel=\"attachment (max-width: 264px) 100vw, 264px\" \/><\/a><p id=\"caption-attachment-700\" class=\"wp-caption-text\">Removing the core<\/p><\/div>\n<p>&nbsp;<\/p>\n<p><strong>SETTING UP FOR SMOKING<\/strong><\/p>\n<p><span class=\"wpsdc-drop-cap\">T<\/span>he base smoker pan will hold the Ash <a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\"><strong>Minuto\u00ae <\/strong><\/a>wood chips.\u00a0 Remember, the chips need exposure to the heat to release their flavoring.\u00a0 I set my burner to medium heat (a #4 setting on my stove) which is where it will stay during the entire cook.\u00a0 I let the pan heat for just about 5 minutes then I will be ready to add the <a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\"><strong>SmokinLicious\u00ae<\/strong><strong> Minuto\u00ae Wood Chips<\/strong><\/a> for the wood flavoring.<\/p>\n<p>After heating up my base pan for the chips, I add one large handful of <a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\"><strong>Minuto\u00ae Wood Chips <\/strong>in Size #4<\/a> from <strong><a href=\"http:\/\/www.smokinlicious.com\/\">SmokinLicious\u00ae<\/a>.\u00a0 <\/strong>I place a drip pan over the chips to prevent any of the pear juices from dripping directly onto the chips.\u00a0 Then on goes my grill pan.\u00a0 If you\u2019re using a standard pot for this process, you will place foil over the chips and then place your grate or steamer insert for the pears to sit on.\u00a0 As my pan is large, I can seat 8 halves meat side down to the chips.\u00a0 Keep in mind, pears are one of the healthiest fruits having a low caloric count, 22% fiber, and high antioxidant and anti-inflammatory benefits.\u00a0 The skin has a particularly high phytonutrient benefit making my preference for leaving it intact valid.<\/p>\n<p><strong>SMOKING PROCESS<\/strong><\/p>\n<p><span class=\"wpsdc-drop-cap\">I<\/span>mmediately, you will see just how much smoke is produced with just a handful of <a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\"><strong>Minuto\u00ae Chips<\/strong><\/a>.\u00a0 Notice that the skin of the pears is taking on a very coppery finish.\u00a0 Although you don\u2019t need to turn the pears during the cooking process, I have turned mine just to show the great grill marks that are developed from a 70 minute cooking time.\u00a0 Remember, if you have pears that are not very firm, they will require less cook time.\u00a0 I know mine are ready to be removed from the pan when I feel a slight give in the pear meat when I touch them with a set of tongs.\u00a0 Now remove to a cooling rack and start thinking about the ways to use these.<\/p>\n<p><!--more--><\/p>\n<div id=\"attachment_694\" style=\"width: 160px\" class=\"wp-caption glistening beauties are just making your mouth water!\u00a0 Once I cool these on a rack you\u2019ll see how easy the skin can be removed if you should want to use just the pear meat.\u00a0 There are so many ways you can highlight the smoky flavor: in a smoothie, in a cocktail \u2013 think smoked pear bellini which I will have an upcoming recipe for, sliced in a salad with gorgonzola cheese and a drizzle of balsamic, anything your mind can dream up.\u00a0 Not only will you have a tantalizing flavor boost but you\u2019ll reap the benefits of this very healthy fruit that even kids will
