class=\"has-drop-cap wp-block-paragraph\">It\u2019s time to bring a smoky flavor to one of my favorite though limited in availability, vegetables \u2013 smoked okra!\u00a0 Known as a super healthy food but one that sometimes confuses people on how to cook and eat it, I\u2019m going to bring you an easy method of tenderizing and infusing okra with a pleasant smoky flavor that doesn\u2019t stimulate the sticky juice known to lurk inside.\u00a0<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Though I\u2019m going to use a <a href=\"https:\/\/lifehacker.com\/build-your-own-stovetop-smoker-with-kitchen-gear-you-al-5880818\">stove top smoker<\/a> for my infusion, you can easily adapt this method to the gas grill, charcoal grill or electric smoker using a vegetable basket or tray.\u00a0 Seek out some vibrant green, firm okra and let\u2019s get started on a new way to cook and flavor this healthy vegetable.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\"><strong>Smoker Set Up for Smoked Okra<br \/><\/strong><\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-image my-img-border\">\r\n<figure class=\"aligncenter is-resized\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-5274\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_3758-e1549738951781-765x1024.jpg\" alt=\"The nordic ware stove top smoker we used\" width=\"191\" height=\"256\" \/>\r\n<figcaption><em>#smokedokra <\/em><\/figcaption>\r\n<\/figure>\r\n<\/div>\r\n\r\n\r\n\r\n<p class=\"has-drop-cap wp-block-paragraph\">I\u2019m using my <strong><a href=\"https:\/\/www.nordicware.com\/kettle-smoker\">Nordic Ware Stove Top Kettle Smoker<\/a><\/strong> for this hot smoking method.\u00a0 To start, I place the smoker base on the unlit burner and add about \u00bc cup of <strong><a href=\"https:\/\/www.smokinlicious.com\/wood-chips.html\">Minuto\u00ae Wood Chips<\/a> <\/strong>\u2013 I\u2019m using a #6 in <a href=\"https:\/\/www.barbecue-smoker-recipes.com\/is-all-maple-good-for-smoking-and-seasoning-chips-in-smoker.html\">Sugar Maple<\/a> \u2013 from <strong>SmokinLicious\u00ae<\/strong>.\u00a0 I place the drip pan on top of the wood chips and then ensure the food insert pan is clean and dry.\u00a0 For vegetables, I usually use a medium heat setting on my stove \u2013 I have a gas stove top.\u00a0 This will register between 200-250\u00b0F on the kettle smoker\u2019s temperature gauge.\u00a0 Next, I\u2019ll do a simple preparation to the okra and we\u2019ll be ready to turn on the heat to the stove top unit.<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong><em>Tasting Notes<\/em><\/strong><em>: For the charcoal grill set up, use a <a href=\"https:\/\/www.foodfirefriends.com\/2-zone-cooking\/\">two-zone cooking method<\/a>\u00a0 &#8211; charcoal and wood lit on one half of the grill while the vegetable tray or basket containing the okra will go on the unlit side of the grill.\u00a0 Do the same set up on the gas grill.\u00a0 For the electric smoker, be sure to use a lower heat setting \u2013 around 180\u00b0F.<\/em><\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\"><strong>Smoked Okra- Trim and Smoke<\/strong><\/h2>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Nothing could be simpler than the preparation for okra.\u00a0 You\u2019ll want to ensure that the outside is clean and dry so a simple water wash is good with a pat dry.\u00a0 I like to remove the stem top to allow penetration of the <a href=\"https:\/\/en.wikipedia.org\/wiki\/Smoking_(cooking)\">smoke vapor<\/a> into the center of the pod.<\/p>\r\n\r\n\r\n\r\n<div class=\"wp-block-image\">\r\n<figure class=\"aligncenter is-resized\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-5275\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_3762-e1549739350778-136x150.jpg\" alt=\"our prepared fresh okra on the smoker pan\" width=\"206\" height=\"227\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_3762-e1549739350778-136x150.jpg 136w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_3762-e1549739350778-271x300.jpg 271w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/IMG_3762-e1549739350778.jpg 762w\" sizes=\"auto, (max-width: 206px) 100vw, 206px\" \/>\r\n<figcaption><strong>#okra <\/strong><\/figcaption>\r\n<\/figure>\r\n<\/div>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Place about one pound of fresh okra with the stem tops trimmed into the smoker\u2019s food tray.\u00a0 Try making an even layer of pods so the smoke vapor can flavor the pods evenly.\u00a0 Cover the kettle smoker with the lid and turn the burner on to a medium setting.\u00a0 I use my stove\u2019s vent on high to keep the aroma down somewhat.\u00a0<\/p>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\">Allow the okra pods to tenderize and smoke for about 20 minutes before checking.\u00a0 You just want them to be tender (not falling apart), to where a knife can still cut them into pieces.\u00a0 Once done, remove the pods to a bowl and use these in recipes calling for okra or you can serve as is with a favorite sauce.\u00a0<\/p>\r\n<p><!--more--><\/p>\r\n\r\n\r\n\r\n<p class=\"has-drop-cap wp-block-paragraph\">I plan to make a soup with this batch of smoked okra that will compliment my diced tomatoes.\u00a0 You\u2019ll find that recipe publishing soon under the title <strong>\u201cWood Fired Okra Soup,\u201d<\/strong> which is a great way to enjoy the healthy benefits of this less used vegetable.\u00a0<\/p>\r\n\r\n\r\n\r\n<div class=\"wp-block-image\">\r\n<figure class=\"aligncenter the mucilaginous juice reduces significantly.\u00a0 There will still be enough of this juice left within the pods to gently thicken the soup.\u00a0 I prefer to start cooking this soup, then refrigerator overnight, and reheat for serving the next day.\u00a0 This produces the perfect, slightly thickened consistency to be ladled over cooked rice.<\/em><\/p>\r\n\r\n\r\n\r\n<p
