As these compounds work together, they produce a preservative action on the food which is antibacterial in nature.\u00a0 Lignin modifies the surface of the smoked food as the wood burns making the food scrumptious!<br \/>\n<\/span><\/p>\n<h2><em>Hardwood vs. Softwood for Cooking- <\/em>The Lignin Compound<\/h2>\n<p>Although all<span style=\"font-family: Times New Roman;
