class=\"wpsdc-drop-cap\">D<\/span>on\u2019t make the mistake of thinking <a href=\"https:\/\/www.foodnetwork.com\/recipes\/articles\/guide-to-fresh-herbs\">fresh herbs<\/a> are to be used in dishes as, well, fresh only.\u00a0 Although you may have dried your fresh herb harvest before, we are bringing another alternative to you, smoked herbs.<\/p>\n<p>We hot smoke the fresh herbs on the grill then turn them into a dust for use in all types of dishes.\u00a0 The smoking process will bring a depth of flavor that you\u2019ve likely never experienced before.\u00a0 Go to the herb garden and pick your favorite varieties and let\u2019s get making <a href=\"https:\/\/www.thespruce.com\/herbs-for-smoking-mixtures-1762191\">smoked herb dust<\/a>!<\/p>\n<h2><span style=\"color: #ff6600;\"><strong>\u00a0<\/strong><strong>Smoke Vapor Infusion<\/strong><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-4899 size-thumbnail\" style=\"border: 5px solid #2e9630;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Sep-14-12-49-38-PM-e1540666383362-112x150.jpeg\" alt=\"Fresh herbs on the grill using a grilling cage \" class=\"wpsdc-drop-cap\">O<\/span>ne thing about this smoked herb technique is you can do the smoke infusion by a variety of equipment methods.<\/p>\n<p>For those with a gas grill, add <a href=\"https:\/\/smokinlicious.com\/wood-chunks.html\">wood chunks<\/a> either directly to the heat shields on one side of the grill or add wood chunks to a metal smoker box that can be placed on the heat shields or the grill grate.\u00a0 For charcoal grill owners, light your charcoal and allow to reduce to hot coals only.\u00a0 Add a piece or two of hardwood chunks or a handful of <a href=\"https:\/\/smokinlicious.com\/wood-chips.html\">hardwood chips<\/a> to the hot coals.\u00a0 If possible, push the hot coals to one side of the grill.\u00a0 For both grill types, you want to use a <a href=\"https:\/\/www.foodfirefriends.com\/2-zone-cooking\/\">two-zone cooking method<\/a> so the herbs don\u2019t catch fire.<\/p>\n<p>For those that don\u2019t own grilling equipment or who simply don\u2019t want to bother lighting up the grill, you can use a <a href=\"https:\/\/www.amazon.com\/Breville-PolyScience-Smoking-Infuser-Commercial\/dp\/B01MSB5USZ\">handheld food smoker<\/a>.\u00a0 Simply place micro wood chips in the bowl of the unit, place the herbs in a storage bag with the tubing of the smoker unit, cinch the end of the bag around the tubing, and light the chips.\u00a0 I like to leave the smoke in the bag for maximum smoke vapor infusion.<\/p>\n<p>I used both my gas grill and charcoal grill for the smoke process by placing my herbs in a vegetable basket and grilling with the herbs on the unlit side of the grill.\u00a0 \u00a0\u00a0Within the first 5 minutes, you\u2019ll see how the herbs lose moisture and begin the drying stage.<\/p>\n<p><strong><em>Tasting Notes: <\/em><\/strong><em>I find the handheld food smoker will produce the boldest smoke flavor to the herbs.\u00a0 The intensity of flavor rated from lightest to boldest based on equipment would be a gas grill, electric smoker, pellet smoker, charcoal grill, handheld food smoker.\u00a0 <\/em><\/p>\n<h2><span style=\"color: #ff6600;\"><strong><em>Grinding Process<\/em><\/strong><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-4900 size-thumbnail\" style=\"border: 4px solid #db503c;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Sep-16-4-31-06-PM-e1540666489843-128x150.jpeg\" alt=\"smoked herbs in the food processor for reduction into smoked herbs dust\" https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Sep-16-4-31-06-PM-e1540666489843.jpeg 752w\" sizes=\"auto, (max-width: 128px) 100vw, 128px\" \/><\/p>\n<p><span class=\"wpsdc-drop-cap\">O<\/span>nce the herbs have charred and dried, it\u2019s time to remove them from the grill and bring them to the food processor.\u00a0 I have a mini processor that only has two settings: chop and grind.\u00a0 I prefer to use this appliance to bring the smoked herbs to dust level but a spice grinder works just as well.<\/p>\n<p>First, remove all the herb leaves from the stems and place a small quantity in the food processor bowl. You can remove the leaves by placing the entire herb sprig in a colander and pressing the leaves through to parchment paper.\u00a0 Secure the lid and grind until you get as fine a dust as the appliance will allow.\u00a0 Both the appliance and the herb will determine how fine the herb dust will get.\u00a0 As you will see, basil dust becomes finer than oregano.\u00a0 This technique will work for just about any herb you can grow or locate at the market.\u00a0 Store the herb dust in glass or metal jars for up to a year.<\/p>\n<p><strong><em>Tasting Notes:<\/em><\/strong> <em><a href=\"https:\/\/www.today.com\/food\/smoky-flavor-hot-how-add-it-drinks-desserts-more-6C10167272\">Smoked<\/a> herbs are much stronger in flavor than the standard dried herb.\u00a0 Adjust the amount used in recipes as needed.\u00a0 It is often best to start with less, taste, and then add more as needed.<\/em><\/p>\n<h2><span style=\"color: #ff6600;\"><strong>So Many Uses<\/strong><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-4902 size-thumbnail\" style=\"border: 4px solid #000000;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Sep-16-4-32-32-PM-e1540666647529-117x150.jpeg\" alt=\"finished herb bottles of smoked Basil and Smoked oregano\" width=\"117\" height=\"150\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Sep-16-4-32-32-PM-e1540666647529-117x150.jpeg 117w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Sep-16-4-32-32-PM-e1540666647529-234x300.jpeg 234w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Sep-16-4-32-32-PM-e1540666647529.jpeg 473w\" sizes=\"auto, (max-width: 117px) 100vw, 117px\" \/><\/p>\n<p><span class=\"wpsdc-drop-cap\">E<\/span>xperimentation is key when it comes to #herbdust.\u00a0 Most often, herbs will be applied to meats and poultry, perhaps rice and pasta dishes, but there are so many more foods that are good pairings for herb dust.\u00a0 Let\u2019s take parsley as an example.\u00a0 Commonly used with fish and beef, parsley is a great pairing for sweet items as well.\u00a0 This includes banana and cream.\u00a0 It\u2019s important that you look beyond the traditional side dishes and entrees and explore the sweet side of what herbs can offer.\u00a0 By doing so, you\u2019re sure to find endless combinations that will tickle your palate and give you more pleasing menu experiences.<\/p>\n<p><strong><em><u>The Culinary Crew<\/u><\/em><\/strong><strong><em> wants you to know \u2026<\/em><\/strong><\/p>\n<p>\u2026 that the two-zone method is certainly a practice that you will want to master and prioritize in your wood cooking toolkit, especially when grilling and smoking delicate fresh consumables like herbs.\u00a0 Not only will two-zone cooking avoid those acrid tastes associated with flare ups, it will infuse your food items with a nice balance of wood smoke flavoring.<\/p>\n<h2>SmokinLicious\u00ae products used in this blog:<\/h2>\n<h3><a href=\"https:\/\/www.smokinlicious.com\/blog\/wood-chunks-double-and-single-filet\/\">Wood Chunks- Double &amp;
