Be sure you also have a hood vent where you will be using the stovetop smoker in order to maintain a smoke-free kitchen.<\/li>\n<\/ul>\n<p>You will find chestnuts available prepackaged or in bulk when in season.\u00a0 Although the packaged product will include a directive to cut an X in the flat surface of each nut, I grew up in a household where we always cut off the stem side.\u00a0 This is the small, dark cap side to the chestnut.\u00a0 The chestnut has a cap and a pointed end giving it a bloated teardrop look.\u00a0 I have found that when smoking, I get better control of the smoke infusion with a fresh cut to one end.\u00a0 Keep in mind, not all the chestnuts purchased will likely be viable as often mold will take hold of some of the chestnuts which you won\u2019t see until you cut into them.\u00a0 As the chestnuts age, they can develop a fuzzy mold on the outside which will tell you not to waste your time cutting that one open!\u00a0 Simply discard!<\/p>\n<p>Generally, chestnuts have a flat side and a rounded side.<\/p>\n<p><span class=\"wpsdc-drop-cap\">T<\/span>o prepare them:<\/p>\n<ul>\n<li><em>lay<\/em> the chestnut on the cutting board with the flat side down.\u00a0 Place your knife blade over the small dark cap, and<em> slice<\/em> off in one motion.\u00a0 This will reveal the chestnut meat inside which will have a<em> yellow-white hue<\/em>.\u00a0 Once the cap is off, you\u2019ll be able to tell if any mold has set in as it will have a marked gray\/black appearance.\u00a0 If any mold is noted, discard the chestnut as it won\u2019t cook tender.\u00a0 If the majority is free of mold, go ahead and keep it for the smoking\/cooking process.<img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-4856 size-thumbnail\" style=\"border: 3px solid #000000;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/Cutting-chestnut-e1539969097227-150x54.jpeg\" alt=\"Triming the chestnuts\" width=\"150\" height=\"54\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/Cutting-chestnut-e1539969097227-150x54.jpeg 150w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/Cutting-chestnut-e1539969097227-300x107.jpeg 300w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/Cutting-chestnut-e1539969097227-768x275.jpeg 768w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/Cutting-chestnut-e1539969097227.jpeg 949w\" sizes=\"auto, (max-width: 150px) 100vw, 150px\" \/><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>To do stovetop smoking, there are 4 parts needed:<\/p>\n<ul>\n<li>a pan to hold the heat and wood chips<\/li>\n<li>a drip pan to prevent rendered fat and juices from entering the wood. Generally, you only need the drip pan when you actually have a food item that will produce juices or fat drippings.<\/li>\n<li>a grill pan<\/li>\n<li>a lid.<\/li>\n<\/ul>\n<p><strong>Note:<\/strong> Smoked chestnuts will not produce any drippings though they do have a percentage of water that will be released as steam into the lid of the pan.\u00a0 Just be sure when you open the lid that you keep any collected water from dripping back into the cooking grate.<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: left;\"><strong><span class=\"wpsdc-drop-cap\">N<\/span>ow it\u2019s time to start the heat under your smoker pan.\u00a0<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-4857 size-thumbnail alignright\" style=\"border: 4px solid #000000;\" stovetop smoker over the burner and turn the burner to medium.<\/li>\n<li>Add about 1 handful of wood chips.\u00a0 I am using<a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\"> <strong>SmokinLicious\u00ae Minuto\u00ae Wood Chips Size #6<\/strong><\/a> in Wild Cherry which will provide great color to the chestnut\u2019s meat.\u00a0 The <a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\">wood chips<\/a> will combust and char but they will not ignite and there won\u2019t be any need to add any additional <a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\">wood chips<\/a>.\u00a0 One handful is all it will take to both cook and flavor the chestnuts.<\/li>\n<li>After adding the <a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\">wood chips<\/a> to the smoker base, place the grill pan on next.\u00a0 Take the prepared chestnuts and spread them evenly into the grill pan.\u00a0 Then cover with the lid.\u00a0 Do not change the heat level during the cooking\/smoking process.\u00a0 There is no need to rotate the chestnuts as the cut end will ensure that the heat and smoke vapor penetrate each piece.<\/li>\n<li>The cooking process will take between 40-60 minutes depending on the number and size of the chestnuts used.\u00a0 I usually do a check about 30 minutes in order to gauge the total cook time.<\/li>\n<\/ul>\n<p>As you check the chestnuts and start seeing the shell separate from the meat, you\u2019ll know you are getting close to the tender stage.\u00a0 Here is my trick for checking for doneness.\u00a0 Take the end of a paring knife and gently insert the tip into the center of the chestnut meat.\u00a0 If the blade passes into the flesh without effort, you are finished with the cooking process.<\/p>\n<ul>\n<li>Turn off the heat to the smoker pan and allow the smoked chestnuts to rest for a few minutes before removing from the pan.\u00a0 Remember, these shells will be very hot so use tongs to remove them from the pan.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span class=\"wpsdc-drop-cap\">Y<\/span>ou can see that despite the <a href=\"https:\/\/www.smokinlicious.com\/blog\/minuto-chip-page\/\"><strong>Minuto\u00ae Chips<\/strong><\/a> being exposed to consistent heat for about an hour, they merely smolder and char, never igniting.\u00a0 In fact, you could easily use these chips again for another short cook item and they would still give off great flavor.\u00a0 Once the chestnuts have cooled enough to handle, I remove all the shell and membrane.\u00a0 These golden beauties are now ready to eat or to add a special flavor to recipes calling for chestnuts.\u00a0 Just another way to bring something new to a seasonal
