class=\"wpsdc-drop-cap\">I<\/span>\u2019m going to make a confession.\u00a0 I rarely select steak to grill anymore.\u00a0 The reason \u2013 there are just too many other options that I simply prefer.\u00a0 Like beef riblets, short ribs, and shank.\u00a0 Oh, the bone-in shank!\u00a0 That is my favorite.<\/p>\n<p>I\u2019m going to give you a wet rub recipe and a grilling technique you can do on the grill of your choice, though I\u2019ll be picking the easy gas grill.\u00a0 Get to the butcher and select some premium bone-in beef shanks then visit <a href=\"https:\/\/www.smokinlicious.com\/wood-chunks.html\"><strong>SmokinLicious<\/strong><strong>\u00ae<\/strong><\/a> online for some wood chunks.\u00a0 Then get ready for the best grilled &amp; smoked beef shanks you\u2019ve ever had!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-4336 size-thumbnail\" style=\"border: 6px solid #800000;\" Great Wet Rub<\/em><\/strong><\/h2>\n<p><span class=\"wpsdc-drop-cap\">I<\/span> tend to lean toward some Asian-inspired ingredients for my rubs, especially those that are a wet rub.\u00a0 While working on the rub, be sure you\u2019ve started your grill so it will be ready to go when the meat is rubbed.\u00a0 Remember, we are using a two-zone set up for the grill so burners lit only on one side of the gas grill with the wood chunks placed on the heat shield or in a smoker box placed over the lit burners like I\u2019ve done.\u00a0 Or, for the charcoal\/wood grill, hot coals banked to one side of the grill.<\/p>\n<p><span class=\"wpsdc-drop-cap\">F<\/span>or this wet rub, you\u2019ll need equal parts of the following ingredients:<\/p>\n<ul>\n<li>Ground ginger<\/li>\n<li>Whole allspice \u2013 about 30<\/li>\n<li>Garlic powder<\/li>\n<li>Cinnamon<\/li>\n<li>Cocoa powder<\/li>\n<li>Sesame oil<\/li>\n<li>Worcestershire sauce<\/li>\n<li>Hoisin sauce<\/li>\n<li>Honey<\/li>\n<\/ul>\n<p><span class=\"wpsdc-drop-cap\">S<\/span>tart by combining the dry ingredients, followed by the wet and combine with mortar and pestle until a paste is made.\u00a0 Then coat the beef shanks on both sides and the edges with the wet rub.\u00a0 <img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-4338\" style=\"border: 4px solid #422100;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Jul-19-2-51-10-PM-e1532801406834-150x150.jpeg\" alt=\"Our wet rub applied to raw beef shanks before the grill\" roasting rack, then place the shanks on the rack.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><strong><em>Tasting Notes: <\/em><\/strong>don\u2019t be afraid to use a store-bought rub and simply add oil and\/or garlic\/spice pastes.\u00a0 There is nothing off limits when it comes to producing a rub.<\/p>\n<h2><strong><em>Smoking<\/em><\/strong><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-4337 size-thumbnail\" style=\"border: 4px solid #ffe1c4;\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Jul-19-2-50-51-PM-e1532801302943-126x150.jpeg\" alt=\"our cooked beef shanks\" width=\"126\" height=\"150\" class=\"wpsdc-drop-cap\">T<\/span>ime to open the pre-heated grill and start the cooking of the shanks.\u00a0 The wood chunks should be smoking well at this point so add the shank pan to the unlit side of the grill.\u00a0 Leave untouched for at least 40 minutes.\u00a0 Return to check the internal temperature.\u00a0 Flip the shanks and rotate the foil pan.\u00a0 Leave until the meat registers 140-145\u00b0 F.<\/p>\n<p><strong><em>Tasting Notes: <\/em><\/strong>select the hardwood you like or use a combination of hardwoods like I did with my shanks \u2013 maple, hickory and white oak.<\/p>\n<h2><strong><em>Smoked Beef Shanks- Serve &#8217;em Up<\/em><\/strong><\/h2>\n<p><span class=\"wpsdc-drop-cap\">W<\/span>hen done, I simply slice against the grain for beautiful, flavorful beef that has a controlled infusion of smoke.\u00a0 Here\u2019s a tip: be sure you enjoy the marrow in the bones!\u00a0 It is very rich so if you elect not to eat it when the meat is done, use it with onions and shallots to make a confit, or use it with a rich pasta dish to make the flavor of the richness even more stunning.\u00a0 Or, combine the marrow with an acidic dish like an arugula salad with lemon and capers.\u00a0 And don\u2019t forget to save the bones to make our <a href=\"https:\/\/smokinlicious.com\/recipe\/2018\/05\/31\/smoked-bone-broth-for-health-flavor\/\">smoked beef
