most common question posed to us \u2013 how does the wood make the food taste?\u00a0 Although I have answered this question hundreds of times, it started me thinking about my answer.\u00a0 It was not complete.\u00a0 I was not explaining that taste <strong>IS<\/strong> aroma.<\/p>\n<div id=\"attachment_422\" style=\"width: 175px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/www.smokinlicious.com\/blog\/taste-is-aroma\/hardwoods-lake-mirror\/\" rel=\"attachment wp-att-422\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-422\" class=\" wp-image-422\" src=\"http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/hardwoods-lake-mirror.jpg\" alt=\"Flavor by Mother Nature\" width=\"165\" height=\"248\" \/><\/a><p id=\"caption-attachment-422\" class=\"wp-caption-text\">Flavor by Mother Nature<\/p><\/div>\n<p>Our experiences with food revolve around our senses and of those senses 3 deal primary with food: taste, touch, and smell.\u00a0 Obviously, you would assume that the sense of taste is the absolute in food experience but you would be wrong.\u00a0 10,000 plus different odors are relayed via our <a href=\"https:\/\/en.wikipedia.org\/wiki\/Olfaction\">sense of smell<\/a> which occurs through our nose and mouth.\u00a0 As much as 80% of what is referred to as taste is <strong><em>aroma<\/em><\/strong>.<\/p>\n<div id=\"attachment_5444\" style=\"width: 160px\" class=\"wp-caption alignleft\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-5444\" class=\"wp-image-5444 size-thumbnail\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/Smoke-gif-square-150x150.gif\" alt=\"smoke vapor\" class=\"wp-caption-text\">Cooking smoke vapor flavors food<\/p><\/div>\n<p>Now, apply this information to the fact that we use wood in cooking techniques that involve infusion of <a href=\"https:\/\/en.wikipedia.org\/wiki\/Smoking_(cooking)\">smoke vapor<\/a> to foods and ingredients, and you will begin to understand where I am going with this.\u00a0 We have all had the experience of smelling a neighbor burning fallen leaves come Fall.\u00a0 It is not a pleasant aroma.\u00a0 Could you imagine someone putting food over a fire that contained leaves as fuel and then tasting the food cooked over that fuel source?\u00a0 Terms that come to mind include bitter, acrid, burnt, and pungent.<\/p>\n<h2>Taste Is Aroma- Overall Flavor is Dependent on a lot of Factors<\/h2>\n<p>I have my answer to the question \u201cWhat kind of flavor does (insert wood type here) produce.\u201d The overall flavor is dependent on a lot of factors.\u00a0 These include:<\/p>\n<ul>\n<li>climate and soil of where the tree is grown: the more balanced the pH level of the soil and a location that has suitable precipitation throughout the year, are more favorable to a hardwood tree\u2019s benefit as a cooking wood<\/li>\n<\/ul>\n<ul>\n<li>bark or bark-free: this affects burn rate and flavor, and yes, it can fluctuate your temperature control<\/li>\n<\/ul>\n<ul>\n<li>moisture level: the drier the wood the faster it goes through combustion and the more heat it produces. You need some level of moisture left in the wood to produce smoke<\/li>\n<\/ul>\n<ul>\n<li>humidity of the cooking environment: dry cooking environments do not allow for smoke vapor to stick<\/li>\n<\/ul>\n<ul>\n<li>type of dry rub and\/or sauce\/marinade used: wood needs to be viewed as an ingredient to the entire cooking experience so ALL the ingredients need to marry to produce a great flavor. The wood is just one flavor component<\/li>\n<\/ul>\n<ul>\n<li>what you&#8217;re cooking (beef, turkey, pork, chicken, lamb, goat, etc.): maple used on beef will taste completely different than maple used with chicken. Plus, the type of meat\/poultry also influences the flavor,\u00a0 so think generic versus farm raised and cage free versus free range. Just as the soil and climate affect the trees so too does the diet\u00a0and climate affect the animal.<\/li>\n<\/ul>\n<h2>Taste Is Aroma- Flavor Guide<\/h2>\n<p>Although we offer a <a href=\"http:\/\/www.smokinlicious.com\"><strong>SmokinLicious\u00ae<\/strong><\/a> flavor guide with descriptors of the undertones the wood can produce, here is my best summary of the hardwoods we provide:<\/p>\n<p><strong>Mild: <\/strong><a href=\"https:\/\/www.smokinlicious.com\/products.html\">Alder, Ash, Sugar Maple, Wild Cherry<\/a><\/p>\n<p><strong>Moderate: <\/strong><a href=\"http:\/\/www.smokinlicious.com\">Beech, Hickory<\/a><\/p>\n<p><strong>Strong: <\/strong><a href=\"https:\/\/www.smokinlicious.com\/products.html\">Oak<\/a><\/p>\n<p style=\"text-align: left;\">If you treat the wood as an ingredient you will come to appreciate all that it can offer.
