Veal (steaks, roasts, and chops): 145\u00b0F\/62\u00b0C<\/li>\n<li>Ground meats &amp; sausage: 160\u00b0F\/71\u00b0C<\/li>\n<li>Whole poultry, poultry breasts, &amp; ground poultry: 165\u00b0F\/74\u00b0C<\/li>\n<li>Hot dogs: Cook until steaming hot<\/li>\n<\/ul>\n<p>Remember, thicker cut meats and poultry will need to be placed closer to the fire or heat.\u00a0 Utilize the upper grill grate for those items that are more fragile like thinner fillets of fish, vegetables, fruit, or for heating sauces.<\/p>\n<h2><span style=\"color: #993300;\"><strong><em>Tip #3<\/em><\/strong><\/span><\/h2>\n<p>You cannot partially cook meats and poultry by <a href=\"https:\/\/en.wikipedia.org\/wiki\/Parboiling\">parboiling<\/a> or microwaving and then placing in the refrigerator for grilling the next day.\u00a0 Although you may think this will lessen the cooking time on the grill, what you\u2019re doing is introducing the potential for everyone to become sick.\u00a0 The reason?\u00a0 Partial cooking does not eliminate all bacteria growth.\u00a0 The reality is, you would be allowing bacteria to continue to grow.<\/p>\n<h2><span style=\"color: #993300;\"><strong><em>Tip #4<\/em><\/strong><\/span><\/h2>\n<p>Take the time to properly clean your grill or smoker at the start of the outdoor cooking season.\u00a0 It\u2019s common to close vents on the grill or smoker when you cover it up for the winter season but these aides in stimulating mold growth on the grill grate and\/or inside cover and walls.\u00a0 For that reason, it\u2019s important to scrub down the interior of the grill or smoker using a cleaning mixture;
