The flavour profile is on the mild side with a sweet undertone. Feel free to use the wood with any food: chicken, turkey, game birds, beef, lamb, fruit, vegetables, chocolate, eggs, etc.<\/p>\n<p>Depending on the time of year the maple is harvested will determine the coloring to the food.\u00a0 Color range can be from a deeper brown to a lighter tan. <em>Why so much color variation?<\/em>\u00a0 Maple has peak periods for harvesting in order to avoid the heavy sap run in this wood which generally starts in December finishing in March.<\/p>\n<p><!--more--><\/p>\n<p>This wood mixes easily with other woods, particularly <a href=\"https:\/\/www.smokinlicious.com\/blog\/is-hickory-the-wood-to-smoke-grill-with\/\">Hickory<\/a>, <a href=\"https:\/\/www.smokinlicious.com\/blog\/ill-take-mine-with-an-olive\/\">Ash<\/a>, and <a href=\"https:\/\/www.smokinlicious.com\/blog\/will-cherry-sweeten-everything-it-touches\/\">Cherry<\/a>.
