Is easier than you may think follow our steps below!<\/p><\/div>\n<h2 style=\"text-align: center;\">OPEN PIT COOKING- BUILDING THE PERFECT FIRE<\/h2>\n<audio class=\"wp-audio-shortcode\" href=\"http:\/\/www.smokinlicious.com\/\"><strong>SmokinLicious<\/strong><strong>\u00ae<\/strong><\/a> receives a lot of questions about wood-fired cooking and one of the most repetitive concerns the building of the fire for cooking.\u00a0 We\u2019ve developed this series to address how to build the\u00a0 fire by equipment and technique.\u00a0 For <strong>Part I<\/strong>, we cover the open pit cooking fire.<\/p>\n<h2><span style=\"color: #993300;\"><strong><em>Get Organized- Open Pit Cooking<br \/>\n<\/em><\/strong><\/span><\/h2>\n<p>The first step is to know <span style=\"text-decoration: underline;\"><strong>where<\/strong><\/span> you will build the fire.\u00a0 Are you planning on using an outdoor fireplace, a fire pit, or will you construct a temporary fire location?<\/p>\n<p>When using an existing fireplace located outdoors, you must ensure that the <a href=\"https:\/\/www.merriam-webster.com\/dictionary\/firebox\">firebox<\/a> is clean of previous ash and wood.\u00a0 The same is true for a open pit cooking fire pit.\u00a0 If you will set up a temporary location for the fire, consider what you will use for materials to secure the area.\u00a0 It is never recommended to use your patio, paved driveway or lawn because a hot fire is sure to damage them or, at the very least, mar their appearance (thin charcoal black coating the surface).\u00a0 Using large stones, interlocking bricks, or a metal fire ring work great at securing the area to contain your fire.<\/p>\n<p>Once you\u2019ve decided on the location, you\u2019ll need to collect some supplies to make the cooking safe and fun.<\/p>\n<p>\u25aa material to contain the fire like stones, bricks or a cast iron\/wrought iron ring.\u00a0 You can use an outdoor fireplace or open pit cooking fire pit whether permanent or portable<\/p>\n<p>\u25aa water, shovel, dirt, and\/or fire extinguisher to deal with potential fire spread or wayward embers<\/p>\n<p>\u25aaSmokinlicious\u00ae smoking <a href=\"https:\/\/www.smokinlicious.com\/wood-chips.html\">wood chips<\/a> for quick lighting<\/p>\n<p>\u25aa <img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-2265\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/THUMBNAIL-DOUBLE-FILET.jpg\" alt=\"picture of Smokinlicious Double filet wood chunks make a perfect source for developing the perfect cooking fire\" width=\"100\" height=\"100\" \/>small twigs or small pieces of hardwood to create a tepee around the wood chips (we like our Smokinlicious\u00ae smoking <a href=\"https:\/\/www.smokinlicious.com\/wood-chunks.html\">double or single filet chunks<\/a>)<\/p>\n<p>\u25aa larger hardwood pieces to create a 2<sup>nd<\/sup> tepee around the first (Smokinlicious\u00ae<a href=\"https:\/\/www.smokinlicious.com\/smoker-log.html\">1\/4 cut logs<\/a> work great for that)<\/p>\n<p>\u25aa rolled newspaper or fire starters<\/p>\n<p>\u25aa have additional hardwood for producing more coals for cooking as needed<\/p>\n<p>\u25aa a coal rake, fireplace tongs for moving and relocating wood pieces, spray bottle of water to tame flames near food, instant read thermometer (you can also use a traditional wrought-iron log holder to make the fire \u2013 the hot coals will fall through and then you rake them to the cooking side)<\/p>\n<h2><strong><em>\u00a0<\/em><\/strong><span style=\"color: #993300;\"><strong><em>The Perfect Fire for Open Pit Cooking<br \/>\n<\/em><\/strong><\/span><\/h2>\n<p>Always take note of the day\u2019s temperature, wind conditions\/direction, and conditions of your wood (<a href=\"https:\/\/www.smokinlicious.com\/moisture-recommendations-and-table.html\">dry or wet,<\/a> fresh cut or aged) before you start.\u00a0 You want to be sure you set up and start the fire where the wind direction won\u2019t cause smoke to enter house windows or the dining area.\u00a0 Keep those locations upwind.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-2262\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/open-pit-fire-Blog-I-thumb-nails-set-up-of-tee-pee.jpg\" alt=\"stack the wood into a teepee shape to maintain the flame and burning process\" width=\"100\" height=\"100\" \/>In your fire safe area, pile up a few handfuls of hardwood chips (you can use newspaper but I like to try to stay with wood in its natural state).\u00a0 Make a small tepee around the wood chips using small wood pieces (our single filet wood chunks work great) or twigs.\u00a0 Make a second tepee of larger wood pieces around the first one.\u00a0 You\u2019ll see that you\u2019re graduating from small wood pieces to larger as you build but you\u2019re also ensuring good oxygen pockets to help feed the fire to the next level.\u00a0 This is what ensures even combustion and even coals.\u00a0 Now, light the wood chips at the center and allow everything to ignite.\u00a0 Don\u2019t add any additional wood until you see the outside wood ablaze.<\/p>\n<h2><span style=\"color: #993300;\"><strong><em>Fire for Fuel, Coals for Open Pit Cooking<\/em><\/strong><\/span><\/h2>\n<p>The purpose of your shovel other than as protector of wayward fire, is to take those hot coals and move them to the cooking area.\u00a0 Remember, the fire area is not where you are going to cook.\u00a0 That location is nearby but not with the flames.\u00a0 You should never cook over direct flame as it will overcarbonize the foods and result in bitter tastes.<\/p>\n<p>Ideally, you want to cook over coals that have a white colored ash over them.\u00a0 Now, here\u2019s how to determine temperature of those coals: hold your hand over the coals the distance your foods will be.\u00a0 If you can only hold your hand for a count of 2 seconds before you need to pull it away, that is high heat.\u00a0 3-4 seconds is medium-high, 5-6 seconds is medium and 7-8 seconds is low heat.<\/p>\n<h2><span style=\"color: #993300;\"><strong><em>Bring on the Food!<\/em><\/strong><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-2261\"
