article was born from a question which was recently forwarded to <strong>SmokinLicious\u00ae <\/strong>to answer.\u00a0 <em>\u201cWhy salt choices are necessary in food despite adding different ingredients even for sweet dish need(ing) salt\u201d.<\/em><\/p>\n<p><em>\u00a0<\/em>I realized just how important salt is to the style of cooking known as <a href=\"http:\/\/www.smokinlicious.com\/blog\/is-hickory-the-wood-to-smoke-grill-with\/\">barbecue<\/a>.<\/p>\n<h2><strong><span style=\"color: #800080;\"><em>Salt Choices- Why the Need to Salt?<\/em><\/span><\/strong><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-2058\" crystalline form that is used as a seasoning for food.\u00a0 Simply put, salt brings out the flavor or natural essence of food.\u00a0 Salt choices draw out the natural juices in raw meat and dissolves with the liquid forming a brine that gets reabsorbed by the meat.\u00a0 This results in the meat\u2019s ability to hold on to more of its own natural juices during cooking.<\/p>\n<h2><\/h2>\n<h2><\/h2>\n<h2><strong><span style=\"color: #800080;\"><em>Salt Choices- Types<br \/>\n<\/em><\/span><\/strong><\/h2>\n<p>Over the past 5 years, salt choices have become a <strong>very hot<\/strong> commodity in the food industry.\u00a0 There are hundreds of kinds of salts but for simplicity sake, I will discuss those that are commonly found in grocery and food specialty stores.<\/p>\n<h4><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-2059 size-medium\" src=\"http:\/\/smokinlicious.com\/blog\/wp-content\/uploads\/File-Aug-25-4-11-39-PM-e1508942429415-135x300.jpeg\" alt=\"These are our four salt types that we discuss in our blog\" width=\"135\" height=\"300\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/File-Aug-25-4-11-39-PM-e1508942429415-135x300.jpeg 135w, Salt:<\/strong><\/h4>\n<p>Decades ago, this was simply known as iodized salt.\u00a0 This is the most refined salt that is known to have a metallic taste due to the grinding process and high-heat process to produce it.\u00a0 It is almost pure sodium chloride and has the highest per-granule sodium content of all salts.\u00a0 When used in cooking, the cook generally will use too much due to this refined grind size.\u00a0 I recommend you never cook with standard table salt.<\/p>\n<h4><strong>Sea Salt: <\/strong><\/h4>\n<p>This salt type is made by the evaporation of seawater which results in the retainment of natural micronutrients.\u00a0 Unlike table salt which uses a high-heat process, sea salt provides minerals of iodine, magnesium, calcium, potassium and bromide.\u00a0 There are many different grind levels in sea salt and each of those, affect the taste, color, and mouthfeel of the salt itself.<\/p>\n<h4><strong>Kosher Salt:<\/strong><\/h4>\n<p>Known for its ability to distribute evenly on the surface of food, kosher salt is harvested by mining dried up ocean and sea beds.\u00a0 It has a much coarser grind than table salt, which is considered flaky (For cooks, it is reliable, consistent, inexpensive, and pure).<\/p>\n<h4><strong>Finishing Salt: <\/strong><\/h4>\n<p>Just as the name implies, this type of salt is used only when a dish is finished, for instance, sliced tomato with mozzarella and basil, grilled to perfection steak, and even <a href=\"https:\/\/www.instagram.com\/p\/BXqA9zEBNIs\/?taken-by=smokinlicious\">watermelon<\/a>.\u00a0 Therefore, it is considered a very light tasting salt.<\/p>\n<h4><strong>Tamari and Soy Sauce: <\/strong><\/h4>\n<p>I am including tamari and soy sauce as these are very common substitutes for salts in sauces used for barbecue.\u00a0 Sometimes, soy sauce is used in addition to salt or garlic and onion salt for these items, making them much higher in overall sodium content.\u00a0\u00a0\u00a0 On average tamari has 700mg sodium per serving while soy sauce comes in at a whopping 1000mg per serving.<\/p>\n<h2><strong><span style=\"color: #800080;\"><em>Salt Choices in Relation to BBQ Rubs &amp; Seasonings<br \/>\n<\/em><\/span><\/strong><\/h2>\n<p>Hopefully, you\u2019ve learned how to read an ingredient list on any label.\u00a0 The first ingredients listed make up the largest amount of the contents, while the last few ingredients make up the least.\u00a0 I looked at five (5) popular BBQ rubs and seasonings sold on <strong><em>Amazon.com<\/em><\/strong> to see what ingredients made up the bulk of these items and where salt rated on the ingredient list.\u00a0 Here are my findings:<\/p>\n<p><em><strong>McCormick Grill Mates Montreal Steak Seasoning <\/strong><\/em>\u2013 <strong>coarse salt<\/strong>, spices, garlic<\/p>\n<p><em><strong>17<sup>th<\/sup> Street Magic Dust All-Purpose Seasoning &amp; Rub <\/strong><\/em>\u2013 <strong>salt<\/strong>, sugar, dextrose<\/p>\n<p><strong><em>Killer Hogs The BBQ Rub <\/em><\/strong>\u2013 brown sugar, sugar, <strong>salt<\/strong><\/p>\n<p><strong><em>Stubb\u2019s Beef Spice Rub <\/em><\/strong>\u2013 <strong>sea salt<\/strong>, spices, cane sugar<\/p>\n<p><strong><em>John Wayne Rubs <\/em><\/strong>\u2013 <strong>salt<\/strong>, garlic, sugar<\/p>\n<p>As you can see, salt is a primary ingredient of commercially marketed rubs\/seasonings for barbecue.\u00a0 Therefore, I always recommend that you give some consideration to making your own rub or seasoning.\u00a0 When produced in large quantity, you can keep these in the refrigerator for up to a month in an air tight container.\u00a0 Best of all, you\u2019ll have the peace of mind knowing you can control the level of sodium in your meal.<\/p>\n<p>We hope you found this article
