Add a distinct char taste to this abundant vegetable either as a side dish or an ingredient by making ember fired fresh zucchini.<\/p><\/div>\n<h1 style=\"text-align: center;\"><span style=\"color: #ff6600;\">EMBER FIRED ZUCCHINI<\/span><\/h1>\n<p style=\"text-align: center;\">How to cook your zucchini on hot coals.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2042 alignleft\" src=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/audio-button-.jpg\" alt=\"Listen to the audio of this blog\" width=\"77\" height=\"77\" \/><\/p>\n<h3><strong><span style=\"color: #ff0000;\">\u00a0<\/span><\/strong><\/h3>\n<audio class=\"wp-audio-shortcode\" id=\"audio-1819-1\" preload=\"none\" style=\"width: 100%;\" controls=\"controls\"><source type=\"audio\/mpeg\" src=\"http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/EMBER-FIRED-FRESH-ZUCCHINI-BLOG-AUDIO.mp3?_=1\" \/><a href=\"http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/EMBER-FIRED-FRESH-ZUCCHINI-BLOG-AUDIO.mp3\">http:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/EMBER-FIRED-FRESH-ZUCCHINI-BLOG-AUDIO.mp3<\/a><\/audio>\n<p>I love thick-skinned vegetables that come in season during Summer.\u00a0 They are the perfect items to light a fire and make some hot coals to ember fire flavor into them.<\/p>\n<p>We\u2019re getting ready to coal roast one of my favorite vegetables \u2013 zucchini!\u00a0 This is so simple to do and produces an extraordinary flavor for zucchini to be eaten on its own or to be used in your favorite recipe.\u00a0 Clean out the fire pit, <a href=\"http:\/\/www.smokinlicious.com\/blog\/how-to-turn-your-charcoal-grill-into-a-smoker\/?utm_source=google%2B&amp;utm_medium=social\">charcoal grill<\/a> or outdoor fireplace and <a href=\"https:\/\/www.foodandwine.com&gt;cookingtechniques\">prepare to roast<\/a> &#8220;<a href=\"https:\/\/www.foodandwine.com\/news\/cooking-techniques\/how-cook-embers\">ember fired<\/a> fresh zucchini&#8221; directly on the hot coals.<\/p>\n<h2><span style=\"color: #000000;\"><strong><em>Building A Small Fire<\/em><\/strong><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-1986\" style=\"border: 5px solid #ff8040;\" src=\"http:\/\/smokinlicious.com\/blog\/wp-content\/uploads\/BURNING-THE-WOOD-DOWN-121x150.jpg\" alt=\"Starting the fire to burn down the wood into coals\" width=\"87\" height=\"108\" \/>Know this from the start \u2013 You do not need a large fire!\u00a0 A small fire is best to accomplish your cooking in about an hour\u2019s time.\u00a0 For my fire, I am using ten <strong>SmokinLicious<\/strong> <a href=\"http:\/\/www.smokinlicious.com\/blog\/wood-chunks-double-and-single-filet\/\">Single Filet Wood Chunks<\/a> in Ash with a couple of pieces of c<a href=\"http:\/\/www.smokinlicious.com\/blog\/charwood\/\">harwood <\/a>that were left over from a previous cook. \u00a0\u00a0Why <a href=\"http:\/\/www.smokinlicious.com\/blog\/ill-take-mine-with-an-olive\/\">Ash hardwood<\/a>?\u00a0 Because it is hands down, the best hardwood to produce an even bed of coals which is what you want when you coal roast.<\/p>\n<p>I stack the wood so there is quite a bit of air space between the pieces.\u00a0 This ensures I have good oxygen flow to produce combustion quickly. My technique is to stand the wood pieces on their end and make a circle. I try to have a couple of pieces in the center kind of tipped on to each other. \u00a0Remember, you want to produce hot embers quickly so it only requires a little wood and a lot of oxygen to burn things down.\u00a0 I light my wood using a small butane torch. Leave the torch in place until I\u2019m sure the wood has ignited.\u00a0 I keep the lid off my charcoal grill so I can push the combustion process through completion and get those ash covered, hot embers.<\/p>\n<h2><span style=\"color: #000000;\"><strong><em>Red Means Hot<\/em><\/strong><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-1994\" style=\"border: 4px solid #880000;\" src=\"http:\/\/smokinlicious.com\/blog\/wp-content\/uploads\/MAINTAINING-A-SMALL-FIRE-150x144.jpg\" alt=\"Red Hot coals is the goal before adding the zucchini\" width=\"89\" height=\"85\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/MAINTAINING-A-SMALL-FIRE-150x144.jpg 150w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/MAINTAINING-A-SMALL-FIRE-300x288.jpg 300w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/MAINTAINING-A-SMALL-FIRE-768x737.jpg 768w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/MAINTAINING-A-SMALL-FIRE.jpg 1024w\" sizes=\"auto, (max-width: 89px) 100vw, 89px\" \/>You will know when the coals or embers are ready for cooking when you have uniform coals and they are glowing red from the bottom and gray on top.\u00a0 I keep a couple of larger coals banked to the side to maintain heat and for reserved hot coals. Just in case I need to rake more to the cooking side.\u00a0 I like to nestle a high heat metal cooking rack on the hot coals and then place my<a href=\"https:\/\/www.tasteofhome.com\/article\/how-to-cook-zucchini-3-easy-ways\"> whole zucchini on the rack<\/a>.\u00a0 This allows for little ash to accumulate on the skin.\u00a0 Remember, those coals are very hot so the zucchini will take less than 20 minutes to tenderize and char.<\/p>\n<h2><span style=\"color: #000000;\"><strong><em>Turn For Full Char<\/em><\/strong><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-1988\" style=\"border: 4px solid #008040;\" src=\"http:\/\/smokinlicious.com\/blog\/wp-content\/uploads\/RACK-COOKING-ON-EMBERS-e1508007502127-150x115.jpg\" alt=\"Zucchini on the grilling rack over the hot fire coals\" width=\"100\" height=\"77\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/RACK-COOKING-ON-EMBERS-e1508007502127-150x115.jpg 150w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/RACK-COOKING-ON-EMBERS-e1508007502127-300x231.jpg 300w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/RACK-COOKING-ON-EMBERS-e1508007502127-768x591.jpg 768w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/RACK-COOKING-ON-EMBERS-e1508007502127.jpg 829w\" sizes=\"auto, (max-width: 100px) 100vw, 100px\" \/>With the zucchini and coal rack in place, I give the embers about 8 minutes to char and cook the first side of the zucchini.\u00a0 After that time, I gently turn the zucchini so that each side gets an even char.\u00a0 Once the first 8 minutes are done, there will be less time needed for each of the other sides as the zucchini will hold heat.\u00a0 I\u2019ve added one additional wood piece to my banked fire just to be sure I have enough heat in the coal area.\u00a0 I will not put the lid on the unit during the entire cooking process as this is open fire cooking.\u00a0 My total coal cooking time is approximately 16 minutes.<\/p>\n<h2><span style=\"color: #000000;\"><strong><em>Perfection In Smoke &amp; Char on Ember Fired Fresh Zucchini<br \/>\n<\/em><\/strong><\/span><\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-1991\" style=\"border: 4px solid #a80000;\" src=\"http:\/\/smokinlicious.com\/blog\/wp-content\/uploads\/16-minute-clock-150x150.jpg\" alt=\"Dr. Smoke's clock for the cooking time required\" width=\"96\" height=\"96\" srcset=\"https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/16-minute-clock-150x150.jpg 150w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/16-minute-clock-300x300.jpg 300w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/16-minute-clock-768x768.jpg 768w, https:\/\/www.smokinlicious.com\/blog\/wp-content\/uploads\/16-minute-clock.jpg 1024w\" sizes=\"auto, (max-width: 96px) 100vw, 96px\" \/>After placing my ember fired fresh zucchini on hot coals for about 16 minutes total, turning several times to get an even char, this spectacular vegetable is ready for eating.\u00a0 You will see, there is very little coal bed left following this technique so remember, if you are cooking more than a <a href=\"https:\/\/www.quora.com\/What-can-I-do-with-all-these-zucchinis\">couple of zucchini<\/a>, you will need a larger coal bed.<\/p>\n<p>For those of you thinking that the black, charred skin will be bitter and not appealing to eat, think again.\u00a0 Most of the char will rub right off but the flavor will be infused throughout the ember fired fresh zucchini.\u00a0 I\u2019ve sliced mine about \u00bc-inch thick as I plan to make a galette of ricotta, garlic oil, and basil.<\/p>\n<h3><strong><em><u>The Culinary Crew wants you to know<\/u><\/em><\/strong><strong><em>&#8230;
