is the year!\u00a0 You made a promise to yourself, family and friends that this outdoor cooking season, you were going to bring more flavor to meals cooked on the grill by incorporating smoking wood and <a href=\"http:\/\/smokinlicious.com\/\">grilling wood<\/a>.\u00a0 All you need to know is, <em>what are the options for setting up the grill for this type of cooking without purchasing a smoker?<\/em><\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><strong>We have the answer and lots of options to utilize your existing equipment!<\/strong><\/p>\n<h3><strong><em><span class=\"wpsdc-drop-cap\">L<\/span>P\/Gas Grills of All Types<\/em><\/strong><\/h3>\n<p>There is a great deal of<a href=\"https:\/\/www.washingtonpost.com\/...gas-grill...\/22d46bbc-7ecc-11e7-9do8-b79f191668e...\"> variation in LP\/Gas Grilling<\/a> equipment in terms of grilling surface space, the number of burners, BTU rating, etc.\u00a0 Know up front, that this will play into how frequently you need to replenish grilling or smoking wood or even to monitor the foods being smoked on the grill.\u00a0 Essentially, these tips will work on any brand\/model that you may own.<\/p>\n<h3><strong><em><span class=\"wpsdc-drop-cap\">H<\/span>ow To Add Wood Chunks on Gas Grill<br \/>\n<\/em><\/strong><\/h3>\n<p>Heat diffusers are commonly found on newer models of grills.\u00a0 They are made of high heat tolerant metal and cover the actual burners of the unit.\u00a0 Their purpose is to ensure <a href=\"https:\/\/www.amazingribs.com\/more...and...\/grill...\/best-setups-gas-grills-maintenance-and\">even heat distribution<\/a> throughout the grill so both radiant and conductive heat is maximized.<\/p>\n<h3><strong><em><span class=\"wpsdc-drop-cap\">W<\/span>ood Chunks On The Diffusers<\/em><\/strong><\/h3>\n<p>If you have a grill model that has heat diffusers (remember, they may go by other names like flavorizer bars, flame tamers, heat plates, burner shields, and heat distributors) then you\u2019re ready to use smoking wood <a href=\"https:\/\/www.smokinlicious.com\/blog\/wood-chunks-double-and-single-filet\/\"><strong><em>chunks<\/em><\/strong><\/a> on your unit!\u00a0 Yes, I said smoking <strong>chunks<\/strong>.\u00a0 This is by far the easiest method of getting the true smoke flavor to the foods being cooked.\u00a0 Plus, you can set up an indirect method of cooking using smoking chunks.<\/p>\n<p>You will need 3-4 <a href=\"https:\/\/www.smokinlicious.com\/blog\/wood-chunks-double-and-single-filet\/\">wood chunks<\/a> sized to fit over <a href=\"https:\/\/www.epicurious.com\/archive\/howtocook\/primer\/grilling_lightingandgrilling\">your heat diffusers<\/a> and under the grill grate when setting in place.\u00a0 A 2x2x3-inch size fits most units and these should have some measurable moisture level; at least 20% <a href=\"https:\/\/www.smokinlicious.com\/moisture-recommendations-and-table.html\">moisture<\/a> is ideal meaning you won\u2019t need to presoak the wood.\u00a0 If you have an old grill model before heat diffusers were standard, you can still use smoking wood chunks by placing them in a<a href=\"http:\/\/www.smokinlicious.com\/blog\/boost-up-the-flavor-of-your-smoker-box\/\"> smoker box<\/a>.\u00a0 These boxes will generally fit 3-4 chunks of the size referenced above but be sure to use a good quality box.\u00a0 My preference is cast iron.\u00a0 Insert the chunks into the smoker box and leave the lid off!<\/p>\n<p><!--more--><\/p>\n<h3><strong><em> <span class=\"wpsdc-drop-cap\">I<\/span>ndirect Cooking Method <\/em><\/strong><\/h3>\n<p>What truly makes for barbecue and not just grilling or smoking on an LP\/Gas unit is using the indirect method of cooking.\u00a0 The smoking wood chunks will be set on a burner that is turned on to medium or medium-high heat depending on the BTU level of your unit.\u00a0 The higher the BTU level, use a medium setting.\u00a0 Overall, you want the grill\u2019s temperature to average 225-250\u00b0 F for cooking traditional BBQ items like ribs, brisket, pork shoulder, and poultry.\u00a0 If using the smoker box, you will place the box on the grill grate of the side with the burner lit.\u00a0 My preference is, if doing very large cuts of meat, to turn on two burners if you have a 3-burner or more unit.\u00a0 The foods will be placed on the unlit side of the grill.<\/p>\n<h3><strong><em><span class=\"wpsdc-drop-cap\">W<\/span>ater Keeps Everything Moist<\/em><\/strong><\/h3>\n<p>To ensure that any meat or poultry cooked on the grill remains moist and tender, include a water pan or two in your set up.\u00a0 This is easily done by purchasing readily available disposable pie tins from the discount store.\u00a0 I like to add warm to hot water so the grill does not have to exert much energy to heat up the water, which takes heat away from the unit.\u00a0 Remember, the water will be evaporating during the cooking or smoking process so have additional water available if it depletes before the cooking is complete.\u00a0 Water pans are set on the unlit burner side of the grill, directly under the food.\u00a0 This will also act as a drip pan, catching all those juices.<\/p>\n<h3><strong><em><span class=\"wpsdc-drop-cap\">M<\/span>oist Cold Surfaces Attract Smoke Vapor<\/em><\/strong><\/h3>\n<p>You have your smoking wood chunks on the lit burner, your water pans on the unlit burner, the grill\u2019s temperature is holding steady, the grill grate has been in place taking on heat \u2013 we\u2019re now ready for the meat.\u00a0 Always take the prepared meat directly from the refrigerator to the grill COLD!\u00a0 Cold foods will attract smoke vapor faster, allowing the vapor to condense on the food\u2019s surface.\u00a0 A moist surface also help attract the smoke so feel free to keep a spray bottle of water to spritz your meat\u2019s surface as needed, though this often is not needed.<\/p>\n<h3><strong><em><span class=\"wpsdc-drop-cap\">L<\/span>eave the Lid Alone!<\/em><\/strong><\/h3>\n<p>Remember, this isn\u2019t traditional grilling on the grill.\u00a0 We are doing barbecue smoking using an indirect method of cooking.\u00a0 Keep the lid closed!\u00a0 Every time you do so, you release heat, smoke, and moisture.\u00a0 What you do need to watch closely is the temperature of your unit as the consistent temperature is what ensures an evenly cooked food item, as well as a tender, moist outcome.<\/p>\n<p>Was this just what you were looking
